Its been a busy few days for me and back online finally! Hope everyone's been keeping safe and healthy. On today's menu, a first attempt at Paneer Bhurji - Scrambled Indian Cottage Cheese with onion, tomatoes and spices. Its an easy and quick recipe that gets done in less than 30 minutes and pairs well with flat breads like roti and paratha. You could choose to make this vegan too by replacing paneer with tofu. Recipe below! Ingredients: ▪300 grams paneer, crumbled ▪2-3 garlic cloves, finely chopped ▪1 inch ginger, finely chopped ▪1 to 2 green chillies, finely chopped ▪1 red onion, finely chopped ▪Pinch of hing (asafoetida) ▪ ½ tsp cumin seeds ▪2 tomatoes, pureed ▪1 tsp ground coriander ▪½ tsp ground turmeric ▪½ tsp ground red chilli ▪½ tsp pav bhaji masala ▪Salt to taste ▪Vegetable oil ▪Handful of cilantro, chopped ▪Lemon juice Method: ▪Heat oil in a pan over medium-heat ▪Add cumin seeds to the oil and hing, and stir ▪Add the chopped red onions, green chillies, ginger and garlic Saùte this for 5 to 6 minutes until the onions turn a light brown ▪Next, add in the pureed tomatoes to the mixture and cook this for 5 minutes ▪Add ground coriander, turmeric, red chilli powder and pav bhaji masala. INGREDIENTS:- ☆4 raw banana ☆water for boiling ☆3-4 desi ghee ☆1 ginger finely chopped ☆2 green chilli ☆onion paste(6 medium sized onions) ☆1 cup curd(250gm) ☆salt ☆1 tbsp red chilli powder ☆1 tsp turmeric ☆1 tsp coriander powder ☆water as required ☆1 1/2 cup gram flour ☆1 tsp salt ☆1 tbsp red chilli powder ☆1 tsp turmeric ☆2-3 tbsp desi ghee ☆1/2 onion ☆1/2 tomato ☆coriander leaves METHOD:- ●1.To make Kele Ki Machli, boil whole bananas and water in a pan. ●2.Add desi ghee, ginger, green chillies, onion paste, curd, salt, red chillies, turmeric, coriander powder, and water in a cooking pot and let it cook. ●3.Then peel off the boiled bananas and fry it, and then in a bowl, mix gram flour, salt, red chilli and turmeric. ●4.After that, wrap the bananas in gram flour and fry it in a pan with desi ghee. ●5.Now in another pan, roast the onions and tomatoes in desi ghee. ●6.Take out the curry in a plate and serve it with coriander leaves, banana fish, onions and tomatoes. .
