A sheet pan pizza is a fun and easy way to make satisfying pizza at home. The light airy crust is like a focaccia and the toppings can be anything! Tonight I had some leftover harissa chicken, broccoli which was blanched then tossed with garlic and parm, and red onion. Splashed with a little tomato sauce and then baked for 20-30 minutes at the hottest hour oven can go. I like to go with a raw sauce for the simplicity! 🍕 RECIPE Dough [good for 1 standard half sheet pan 13x18] 7g Active Dry Yeast 415g Warm Water 7g Honey 11g Salt 25g Olive Oil, plus 1/4 cup 544g AP Flour 1. In the bowl of a stand mixer, dissolve yeast and honey with water. Let sit for 10 minutes or until nice and frothy. 2. Add the 25g of olive oil and salt, and turn mixer on low with the dough hook attachment. Add half of the flour and let it fully incorporate before adding the rest. Knead in medium-low speed for 10 minutes. 3. Turn dough out into well oiled bowl, cover, and refrigerate for 24 hours or up to three days. 4. When ready to make pizza, take dough out of refrigerator and let come to temperature. Then press out into the bottom of a well oiled sheet tray. 5. Cover and let dough rest for 30-40 minutes. Basic Pizza Sauce (Raw) [good for two large pizzas] 1 can of whole San Marzano tomatoes 1 clove of garlic 3-4 basil leaves pinch of salt splash of fish sauce 1. In a blender or food processor pulse all ingredients until smooth. Important to pulse and not purée it and introduce a lot of air.
