Spaghetti squash boats Creativity comes to me when I’m starving 😂 Diya picked a spaghetti squash for us to try and I finally got around to making it. It’s my first time trying it and it was sooo fun to eat! I stuffed them with chickpea curry and made a yogurt dressing. Recipe below! Note: I used ginger powder but if you have fresh ginger use that if you’d like Ingredients: - Spaghetti squash, seeds emptied. - 1 can chickpeas, drained - 1/4 red onion, chopped - 2 cups spinach - 1 cup coconut milk - 1 tbsp minced garlic, or 2 mashed cloves - 1 tsp of each: curry powder, garlic powder, coriander, ginger powder, salt - Oil for cooking Yogurt dressing: - 1/4 cup plain yogurt - A dash of dried mint - A pinch of salt - A pinch of garlic powder Steps: 1. Preheat oven to 425 2. Season squash with salt and olive oil then place in a baking pan faced down. Bake for 35 minutes 3. While the squash is baking, you will make the curry. 4. Sauté onions and garlic in some oil 5. Add spinach 6. Add coconut milk and wait till small bubbles form 7. Add chickpeas 8. Add all the seasoning 9. Let it simmer and keep the pot open so the coconut milk thickens and excess liquid evaporates 10. Squash should be ready, use a fork to take the spaghetti strands out 11. Place spaghetti strands in the curry and mix well 12. Pour chickpea curry + spaghetti in the squash boats 13. Drizzle with yogurt and serve!
