If someone told me 20 years ago that my devotion to Triscuits and a love affair with tomatoes would end badly, as in, destroy my health and happiness, I'd have mocked them for being a simpleton...then I'd probably ghost them because who needs some jerk telling you what to do. But, as usual, the joke's on me. Although autoimmune troubles go much deeper than just eating inflammatory foods, that's where they begin. Identifying and removing certain food groups has been the single-most effective thing I did to stop being sick. After a decade of wrong answers or just no answers from the experts in the medical field, finally being told: "THIS IS YOUR PROBLEM: grains, nightshades, sugar, dairy, eggs, legumes" was not really the answer I was looking for, to be honest. Most of my meals were based on a generous foundation of grain, dairy melted on top and an extra-large side of nightshades. Not only did it seem unlikely to me that the most common foods in the world, consumed by people all over the planet, could be responsible for ruining my life, cutting out three quarters of my diet also did not seem like something I could actually do...what was left to eat? There were tears. There were tantrums. I gave denial a spin. But, like a 3-year-old, I got tired of crying and quietly decided I'd try to live with boundaries and figure it out as I went along. I stuck with that philosophy for long enough that I actually stopped feeling like garbage and I managed to not starve to death in the process. Like any toxic relationship, it’s hard to picture cutting ties and ever being happy again. It’s only once you're free and back to feeling like a normal person do you see that the real misery was living with it, not without it.

JAPANESE STYLE PASTA SALAD W/ CREAMY CAULIFLOWER SAUCE I’m not going to lie. I definitely got a bit trigger happy with all of the cassava flour pasta I bought this week and decided to make an AIP version of a Japanese style pasta I’ve had my eye on lately. Instead of using mayo, I made this AIP by creating a cauliflower cream sauce. You are welcome to eat this as a main dish or include it as a side along with your main. Ok ready for the recipe?! INGREDIENTS: (Makes 3-4 servings as a main) 1 package Jovial Cassava Elbows 1 frozen cauliflower package 1/2 cup full fat coconut milk Salt to taste 4-8 pieces cooked bacon, your choice 1 broccoli crown, diced & steamed 2 carrots, diced and steamed Approx 1 TBSP garlic powder, Approx 1/2 TBSP ginger powder TO MAKE: Steam your carrots and broccoli and set aside. Cook the bacon to your style and preference. I like mine semi crispy. Set aside. While the bacon and veg are cooking start making your pasta. Boil water and add the elbows to it when they are ready. Cassava pasta is finicky, so you will need to stand near the stove and stir frequently while it is cooking. Cook until it is al dente - do not over cook as cassava pasta crumbles easily. While the pasta cooks, start your sauce. Microwave (or steam) your cauliflower. Once it’s finished, open the package and drain the water. Add the cauliflower to a blender with the coconut milk, salt, garlic powder and ginger powder. Blend until smooth and creamy. Once the pasta and veg are ready, remove them from the stove, drain the pasta and add it to a large bowl or pan. Place the veggies on top of it. Use a pair of kitchen scissors to cut the bacon into pieces and add them to our bowl. Then pour the sauce over it all and mix.
