I’m in a good mood right now. With out saying too much, it’s been a little crummy but I got some big moves starting to line up. So, I decided to open this bottle. Curieux, is a bourbon barrel aged Tripel blended with a small portion of fresh beer. It lives seven weeks in barrels at @allagashbrewing’s cold cellar prior to blending and bottling. This beer has a lot of barrel flavor( vanilla, coconut, bourbon) and the malty sweetness and effervescent characteristics you’d expect from a Tripel. Another Beer and Cheese appreciation post. Many experts argue that beer and cheese are a far better pairing than cheese and wine. Yes, the cheese/wine combo works but it’s forced at best. Remember that farmers had the grain and the cows. Beer and cheese can make a synergistic palate bomb that wine wishes it could get. I don’t really ever see cows at vineyards, but I can tell you that farmers make beer and cheese. You’ll find that terroir comes across in both beer and cheese that make them the superior pairing. Grapes would make for expensive livestock feed, but barley and wheat would make sense. So I’m drinking an Orval with some Gouda. Orval is one of the more unique Trappist beers. The Monastery(surprise) also makes cheese, which I have not had the fortune to try. Undoubtedly it would make the perfect pairing, but a Gouda or Havarti does the trick. The Gouda I’m eating is aged. It has a salty, nutty, and light toffee flavors. One of my favorite combos: Bigfoot and Humboldt Fog. American Barleywines are much more hop-forward and bitter compared to their English counterparts, and match the intensity of Humboldt Fog as it ages. Barrel fermented Grande Réserve by Chimay. This is my second barrel fermented beer by Chimay, the other finished in Whiskey barrels. I feel this beer offered a great balance between the base and what barrel fermentation can do for a beer. It definitely picks up a vinous quality and a good deal of barrel flavors: tannins, vanilla, a touch of buttery. Saison Dolores: A saison made with rye and wheat. I’m getting a spicy flavor from the rye, and probably the yeast. Bubblegum, fruity/melon flavors as well. I think this would go well with cantaloupe wrapped in prosciutto with a balsamic reduction. The melon would compliment the flavors in the beer while the salty would cut against it.
