Weโ€™ve got something a little different for you today but trust us...itโ€™s BOMB DOT COM ๐Ÿ’ฏ Itโ€™s not really common to have aubergine ๐Ÿ† as the main ingredient in a curry ๐Ÿ› but this one is just too good ๐Ÿคค I (Sharan) am usually not a big fan of aubergines but I could eat this all day EVERYDAY๐Ÿ˜ ๐‚๐จ๐œ๐จ๐ง๐ฎ๐ญ ๐€๐ฎ๐›๐ž๐ซ๐ ๐ข๐ง๐ž ๐‚๐ฎ๐ซ๐ซ๐ฒ ๐ŸŒถ (๐Ÿ‘ ๐ฌ๐ž๐ซ๐ฏ๐ข๐ง๐ ๐ฌ) Ingredients: โ–ช๏ธ1 aubergine, sliced โ–ช๏ธ1 tsp turmeric powder โ–ช๏ธ1 tsp coriander powder โ–ช๏ธ1 1/2 tsp chilli powder โ–ช๏ธ1 tsp curry powder โ–ช๏ธ1 tsp garam masala โ–ช๏ธ1 chilli, sliced โ–ช๏ธ1 can(400ml) coconut milk โ–ช๏ธJuice of 1/2 a lime Method: 1๏ธโƒฃ Heat a deep pan with 2 tbsp of oil and add the slices of eggplant. Let them cook until they wilt down and get crispy. This may take some time and you may need to do this in batches. 2๏ธโƒฃ Bring back all the eggplant slices back in the pan. Add salt, turmeric, coriander and chilli powder, 1โ„4 cup water and stir fry for about 2-3 mins. 3๏ธโƒฃ Add in the sliced chillies, curry powder and mix well. Take it off heat and pour in the coconut milk. Return it to the heat, mix well and cook for 5-6 mins. 4๏ธโƒฃ Season with salt, pepper, garam masala and adjust other seasonings to taste. Squeeze 1โ„2 a lime and give it a good mix.
